Posole

I make mine in the crock pot and just let it cook on high all day. Just throw everything into the pot and let it go. (this is a big batch for my crew, you may need to cut it down a little) After it cooks all day and the meat is falling apart, taste and see if you need to adjust the salt and pepper. I like to serve it with Cilantro and onion with tortillas. 

3 lbs. boneless pork stew meat 
1 medium onion diced 
6 cloves garlic rough chopped 
1 can diced tomatoes 
3 24 oz. cans hominy 
1 t. garlic powder 
1 t. pepper 
2 t. salt 
1 t. oregano 
2 T. Caldo con sabor de Pollo 
1/3 c. red chili powder (NM dried red chili is the BEST)
