Pancakes

1 cup milk
1 egg
2 Tbsp. vegetable oil
2 Tbsp. sugar
1/2 tsp. salt
1 cup flour
1 Tbsp. baking powder


Add all ingredients in the above order.  Don't mix until everything is added.  Whisk it together, but don't worry if it's still a bit lumpy.  You don't want to over mix it.  Get your skillet hot on about medium heat with a little vegetable oil in the bottom of the pan.  Put batter in about a half cup at a time.  When bubbles start to form on the top flip carefully and cook until it puffs up, and feels springy to the touch.  Remove from pan, add a pad of butter and eat with syrup or jam!
