Meatballs

1 lb. ground (beef 80/20 lean)
1 lb. ground turkey or chicken
1 lb. ground pork
2/3 cup old fashioned oats (for paleo) or breadcrumbs
1/2 cup ketchup
2 Tbsp. Worcestershire sauce
2 eggs
2 Tbsp. Italian seasoning
2 tsp. kosher salt
2 tsp. black pepper
1 tsp. garlic powder
1/4 cup finely chopped onion
2 cloves minced or crushed garlic
1 Tbsp. dried parsley
2 Tbsp. olive oil


Put everything in a bowl and mush it together with your hands until it is well mixed.  Don't over mix, or it can make it turn out hard and dry.  Form into desired size balls, and place on a foil lined baking pan (with edges to catch grease) and bake at 400 until done.  Generally in my oven it takes about 20 minutes, but keep an eye on them and check the center of one at about 18 minutes to make sure you don't overcook them.  You can freeze them after they cool and take them out as needed if you like.
