Biscuits

2 cups flour
1 tsp. salt
1 Tbsp. sugar
2 Tbsp. baking powder
1 stick butter cut into chunks and kept cold
3/4 cup milk

Mix the flour, salt, sugar, and baking powder well, then cut in 1 stick of butter.  Work quickly to keep it cold.  When the butter is mixed into the flour (size of small peas) add 3/4 cup of milk and stir 7 times.  Let it sit and soak up the milk for a few minutes before dumping onto a lightly floured surface.  Knead the dough 7 times and flatten it out, or roll it out to about 1/2 inch thick.  Cut into squares with a knife, or circles with a cutter or glass and place on baking sheet.  Bake in preheated 425 degree oven for about 15 minutes.  Keep an eye on them, as all ovens cook differently and you don't want to over bake them.  Remove from oven and serve.
