Sausage Gravy

1 log sausage (I like Jimmy Dean's Hot)
1/2 cup flour
4 cups milk
Salt
Pepper
2 Tbsp. beef bouillon (approx. depending on the brand, start with less, you can add more to taste)
1 Tbsp. dried parsley
1 tsp. vegetable bouillon

Brown sausage in skillet or saucepan.  Add flour and mix in thoroughly with the sausage.  Lower heat to medium and add the other ingredients.  Stir with a whisk until thickened, bubbly, and smooth.  Taste and adjust seasonings.  If you need it thinned out at all, you can add a little bit of milk.  Best served over hot biscuits.

Hot Caramel Bread Pudding

4 Large Cinnamon rolls cut into bite sized chunks
6 Large hot rolls cut into bite sized chunks

Place all the bread on a cookie sheet and bake at 250 for about 30 min to let it crust up.

In mixing bowl, whisk together:
4 eggs
1 c. sugar
1 T. almond extract
1 t. cinnamon
1 T. vanilla
3 c. whole milk

Butter a 9x13 baking dish and put the crusty bread chunks in.  Pour your wet mixture over the top.  Bake at 350 for 40 minutes or until it starts to look brown and crusty on top.  While it is baking, make your hot caramel sauce to pour over top:

In saucepan, bring to boil:
1 c. dark brown sugar
1 c. heavy cream
2 T. butter
1/2 t. Kosher salt
When it boils, remove it from the heat and add 1 T. vanilla extract.  Cut slices into the hot bread pudding and pour over the top and let it soak into the pudding.  Serve hot.  Great with vanilla ice cream.

Gulaschsuppe

2 tablespoons olive oil
2 cups chopped onions
2 tablespoons minced garlic
3 bell peppers, chopped
3 tablespoons tomato paste
1 lb beef, in 1 inch cubes
1/4 teaspoon caraway seed
1 teaspoon paprika
6 cups beef stock
1 tablespoon lemon juice
1 cup potato, peeled and cubes
sea salt
pepper

Directions

1. Heat oil.
2. Saute onions until translucent.
3. Add garlic, peppers and tomato paste.
4. Cook for 10 minutes.
5. Add beef, caraway seeds, paprika, stock and lemon juice.
6. Simmer for about 1 1/4 hours Add potatoes and continue simmering until meat and potatoes are tender.
7. Season with sea salt and pepper to taste.

Raspberry Swirl Cornbread

1 c. Yellow cornmeal
1 c. All purpose flour
1 t. Salt
1 T. Baking powder
1 Egg
1 c. Milk
1/2 c. Vegetable oil
3/4 c. Sugar
1 t. Vanilla
1/2 c. Raspberry jam (I used freezer jam, but any jam would work fine)


Mix everything but the jam together and pour into a greased 9x9 inch square baking dish. Top with the raspberry jam and then swirl it around with a butter knife until it is mixed into the batter in swirls. The jam will work best if it's room temperature or has been stirred up well enough to make it easy to work with. Bake at 400 for 26 minutes or until a toothpick comes out clean.

Artichoke Dip

1 large can artichoke hearts, drained and lightly chopped
1 large portabello mushroom chopped and stir fried with half an eggplant chopped and salted, and I clove garlic
1/2 cup sour cream
1/4 cup mayonnaise
2 T. Ranch dressing
1/2 cup Swiss cheese
1/2 cup Parmesan cheese
pepper
red pepper flakes

Mix all ingredients and top with additional shredded Parmesan cheese.  Bake at 400 until bubbly and cheese is melted.  

Posole

I make mine in the crock pot and just let it cook on high all day. Just throw everything into the pot and let it go. (this is a big batch for my crew, you may need to cut it down a little) After it cooks all day and the meat is falling apart, taste and see if you need to adjust the salt and pepper. I like to serve it with Cilantro and onion with tortillas. 

3 lbs. boneless pork stew meat 
1 medium onion diced 
6 cloves garlic rough chopped 
1 can diced tomatoes 
3 24 oz. cans hominy 
1 t. garlic powder 
1 t. pepper 
2 t. salt 
1 t. oregano 
2 T. Caldo con sabor de Pollo 
1/3 c. red chili powder (NM dried red chili is the BEST) 

Creamy Paprika Chicken Noodles

2 boneless skinless chicken breasts
2 Tbsp. olive oil
Salt
Pepper
Garlic Salt
1/4 cup paprika (not smoked)
1 tsp. vegetable bouillon
2 Tbsp. chopped onion
1 clove garlic chopped or minced
1 can cream of mushroom soup
1 cup sour cream
1/4 cup milk
1 package egg noodles cooked and drained


Put olive oil in large skillet or saucepan, heat to medium high heat.  Add chicken breasts and sprinkle with the seasonings.  When the chicken is browned on the first side, flip it over, and add the onion and garlic on top of the chicken.  When both sides are browned, remove the chicken to a cutting board and dice into small chunks.  Add it back to the pan and lower heat.  When the chicken is thoroughly cooked through, add all the other ingredients, except the noodles.   Taste the sauce and see if it needs more salt and pepper.  Add noodles, stir, and serve hot.

Biscuits

2 cups flour
1 tsp. salt
1 Tbsp. sugar
2 Tbsp. baking powder
1 stick butter cut into chunks and kept cold
3/4 cup milk

Mix the flour, salt, sugar, and baking powder well, then cut in 1 stick of butter.  Work quickly to keep it cold.  When the butter is mixed into the flour (size of small peas) add 3/4 cup of milk and stir 7 times.  Let it sit and soak up the milk for a few minutes before dumping onto a lightly floured surface.  Knead the dough 7 times and flatten it out, or roll it out to about 1/2 inch thick.  Cut into squares with a knife, or circles with a cutter or glass and place on baking sheet.  Bake in preheated 425 degree oven for about 15 minutes.  Keep an eye on them, as all ovens cook differently and you don't want to over bake them.  Remove from oven and serve.

Pancakes

1 cup milk
1 egg
2 Tbsp. vegetable oil
2 Tbsp. sugar
1/2 tsp. salt
1 cup flour
1 Tbsp. baking powder


Add all ingredients in the above order.  Don't mix until everything is added.  Whisk it together, but don't worry if it's still a bit lumpy.  You don't want to over mix it.  Get your skillet hot on about medium heat with a little vegetable oil in the bottom of the pan.  Put batter in about a half cup at a time.  When bubbles start to form on the top flip carefully and cook until it puffs up, and feels springy to the touch.  Remove from pan, add a pad of butter and eat with syrup or jam!

Meatballs

1 lb. ground (beef 80/20 lean)
1 lb. ground turkey or chicken
1 lb. ground pork
2/3 cup old fashioned oats (for paleo) or breadcrumbs
1/2 cup ketchup
2 Tbsp. Worcestershire sauce
2 eggs
2 Tbsp. Italian seasoning
2 tsp. kosher salt
2 tsp. black pepper
1 tsp. garlic powder
1/4 cup finely chopped onion
2 cloves minced or crushed garlic
1 Tbsp. dried parsley
2 Tbsp. olive oil


Put everything in a bowl and mush it together with your hands until it is well mixed.  Don't over mix, or it can make it turn out hard and dry.  Form into desired size balls, and place on a foil lined baking pan (with edges to catch grease) and bake at 400 until done.  Generally in my oven it takes about 20 minutes, but keep an eye on them and check the center of one at about 18 minutes to make sure you don't overcook them.  You can freeze them after they cool and take them out as needed if you like.

Chocolate Chip Cookies (Mom's best)

2 sticks margarine (margarine makes gooey cookies, butter makes more crispy)
3/4 cup white sugar
3/4 cup brown sugar

Cream all together, then add:

1 egg
1 tsp. vanilla
1 tsp. salt
1 tsp. baking powder

Mix together well, then add:

2 1/2 cups flour
Chocolate chips, to taste (I use about 3/4 scant cup)

Mix in well.  It will look a little crumbly to start out, just keep mixing it until it comes together well.  Bake at 350 for 10 minutes.  Remove from cookie sheet to cooling rack immediately.
